California and Maki Rolls (Japanese Sushi)

    1/2 lemon, juiced

    1 medium avocado, peeled,pitted and sliced into 1/4 inch thick pieces

    4 sheets nori (dried seaweed)

    4 cups sushi rice, cooked (make sushi rice in bamboo steamer for correct texture)

    1/3 cup sesame seed, toasted

    1 small cucumber, peeled, seeded and cut into matchstick-size pieces

    4 crabsticks, sliced lengthwise

    Pickeled ginger, wasabi and soy sauce for serving

 

Korean "Sushi" Roll (kimbap)

    4 sheets nori (dried seaweed)

    2 cups cooked rice

    2 tsp sesame oil

    2 tsp salt

Traditional filling:

    1 carrot, julienne

    cucumber, cut into long strips

    2 eggs

    beef (bulgogi)

    1/2 pound of spinach, parboiled

    pickled radish, cut into strips

    imitation crab (optional)

    fishcake (optional)

Alternate filling suggestions:

    smoked salmon and cream cheese

    kimchi and cheese

    spam, mayo and veggies

    2 1/4 cups cold water

    1 1/2 cups Japanese sushi rice (Nishiki)

    1/2 cup Japanese sushi seasoning (Mizikan)

    2 tablespoons mirin

    1 1/2 tablespoons salt

    1/3 cup granulated sugar

    7.5(8 inch) nori (dried seaweed sheets)

    2 teaspoons wasabi paste, for each nori sheet

    1 teaspoon soy sauce, for each nori sheet (optional)

    1 teaspoon pickled ginger, for each nori sheet

 

Special Shrimp Gunkanmaki- Battleship Sushi Roll

    125g shrimp (cooked, salad style)

    2 tablespoons kiwi fruit, diced

    2-3 tablespoons mayonnaise (preferably Japanese)

    1/4 teaspoon fresh ginger, grated

    1 1/2 sheets nori (dried seaweed)

    2 cups cooked rice, seasoned with sushi vinegar seasoning

    1/4 cup rice vinegar

 

Vegetable Sushi Rolls for All Ages

    1/3 cup seasoned rice vinegar

    2 teaspoons sugar

    1 teaspoon salt

    1 1/2 cups short-grained sushi rice

    1 1/2 cups water

    4 sheets toasted nori (dried seaweed)

 

    Filling (pick 3 to 4):

    1 kirby cucumber or 1/2 regular cucumber, seeded and cut into matchsticks

    1 carrot,cut into matchsticks

    1 small yellow bell pepper, stemmed, seeded and cut into matchsticks
